Lark Coffee & Roastery takes flight in Granby

A new coffee shop is carrying on the tradition of Simple Coffee on Agate Avenue in Granby. Lark Coffee & Roastery celebrated its grand opening Feb. 10, 2025.

When Simple Coffee prepared to shut its Granby location in early January, one employee saw an opportunity.

Lulu McCay has reopened the spot with her own brand and vision: Lark Coffee & Roastery. McCay said there has been a seamless transition from Simple to Lark, meaning loyal customers can return to the familiar space, and visitors can find a new favorite cafe.

Lark, which offers a drive-thru and outdoor seating, opened Feb. 10.



McCay, her friends and family celebrated with champagne and a ribbon cutting. Liv Youngs, who opened Granby’s Simple Coffee and still operates the business’s Fraser location, toasted to her former employee turned owner.

McCay told Sky-Hi News that she is excited for upcoming additions, including a space for local artists to display their work or sell handcrafted items.



The coffee shop also still offers drinks in glass jars, a tradition created by Simple Coffee to cut down on plastic waste. Customers can bring back their jars when they’re ready for another coffee.

What’s on the menu?

The coffee shop roasts its own beans for a seasonal rotation of lattes. The winter menu offers vanilla, mocha, brown sugar and bourbon, Irish cream and cafe de olla (traditional Mexican coffee).

Other drinks include matcha, chai, steamed mocha and steamed vanilla plus black, green and herbal teas.

Lark also offers breakfast burritos, fruit and veggie smoothies, soups and a rotating menu of pastries.
